Limit the number a god can have. I don't mean "can use" I mean "can have." At least in classical Greek myth, the gods had a tool that they used and were known for. Hermes had his winged sandals, Poseidon had a trident, Hades the helmet of Invisibility, Zeus and his thunderbolts, Helios and his Chariot.
These things are not just artifacts or weapons, they are tools and symbols. They are the Mark of Office for the gods, and they are a tier above Everything else. I doubt a mortal could even use them. And it was the only one they ever needed to do their job.

I'm pondering bringing some degree of stats back.
The original had Power, Potency, Perception and Presence. Power was raw strength, physical or simply divine; Potency was the area over which Power could be applied, Perception was how far and thoroughly your senses extended and Presence was how much your local area was affected by your god merely being there..

Not really, they sort of drifted away in the revamp though.
I'd like to have some method of differentiating between the Gods in ability. Zaya wouldn't be as strong as, say, Gil, but would be much more perceptive. I'd like for the God to have some basic abilities (Changing of shape*, Flight, Invisibility**, Manipulation of Domain, Domain sense) and a few unique mythical type abilities. Like, Running faster than the wind. Or being able to make mystical wonders. Or being able to see across an ocean. Or someone so skilled in archery, they could shoot down a star. God like powers. * Despite this, it'd be terrible for a disguise with other Gods. You have a theme, which anyone smart enough can figure out. Zaya had silver hair in nearly any incarnation. A relevant unique power could allow them to flawlessly disguise themselves. ** Other Gods can still sense your presence.

I'm thinking of replacing Potency with Precision. It would measure the subtle touch by which power is applied. Perhaps on a scale of 1 to 5.. I might try to create a god on these rough rules in an attempt to see what I'd be like..

I actually had a fun way in mind to test any new rules before implementation.
We play a short game with the same gods, except we control a different one. I play Crav, Wulf get's Gil, Marv plays the Watchman and so on and so forth. And we play them the way we would play them.
