The essay's on the Great Gatsby.

We're supposed to talk about three kinds of rich people from the novel.

I feel as if I'm forced to shoehorn characters into categories..

 That IS the nature of discussing characters into an essay. And I'm sure it's not as difficult as you're making it out to be. There's got to be at least three different rich folks in the story, and their have to be at least three perspectives held among those rich folks, otherwise the assignment would be impossible. Just analyze personalities, and that should give you your answer, without coming across all judgy.

I think it'll be better if I suggest things that you can do to improve your essay (otherwise, I'll get myself too involved in editing, and might well rewrite the whole thing...writing makes me kooky like that...).

 Well, whatever you decide has to be best for you. I support your decision, regardless. Still, if it means you have to leave, I hope your departure isn't permanent. When things get better, please do return; it won't be the same without you!
